Zucchini from the Garden

Our little raised garden project took awhile to get going, but once it did, we have a bounty of tomatoes, cucumbers, zucchini and pumpkins (coming soon).

Each year we end up with so much zucchini! I thought it might be a good time to try some new recipes. I own more than my fair share of cookbooks, but after consulting them, I came up with nothing. So of course, I turned to Pinterest! I found a recipient for baked zucchini sticks and a yummy and interesting recipe for sautéed zucchini ribbons and tried them both and still have some zucchini left over for another experiment. The ribbons were so pretty and fun to make with the peeler.

And frying them up with the lemon zest waiting in the wings smelled divine!

One large zucchini made 3 hearty servings. We loved it! Well, my daughter didn’t LOVE it, she did say I could make the zucchini sticks again though.
