Rainbow Sugar Cookies

Those cookies!
I first spotted these on Pinterest (right, where so many good ideas come from!) and looked up the recipe/instructions from Souders Cookery. I loved that it was so easy and used the Betty Crocker Sugar Cookie mix! This stuff is really a good go-to for sugar cookies, provided you don’t have any food allergies  I first baked with it about a year ago and it was then that I realized that wow, they actually taste good! Adding an entire stick of butter to anything probably goes a long way to making it taste good. That said, these don’t qualify in any way as a healthy treat, just a treat…suitable for a birthday featuring rainbows, candy-land or even Dr. Seuss!

So onto the how to make them part. Grab your ingredients which consists of the cookies mix (follow the directions on the package), food coloring, flour and some colorful sprinkles or dots for the edges and you are all set.

Once you’ve mixed it up, you will separate it evenly into bowls and blend with your favorite food coloring.

From here you will make a small (maybe 3/4″) ball of each color.

My missing photo step is where you gently combine them together to  form a large ball. Be careful not to overwork the ball. Then you roll it into a long, even ‘snake’ (like playdoh). You might need a bit of flour for this so that it won’t stick to your hands or your counter surface. Not too much flour though because then the cookie won’t stick to itself. Gently roll the edges of the cookie into your sprinkles, then place on the cookie sheet.

Bake according to the package directions and WOW – these are so fun! We baked a few days before my daughter’s birthday party and stored in an air-tight container. I almost forgot to plate them up at the party, but once I did, they didn’t last very long.

I’ll wrap this up with an image of two of my daughters cookies. One (the brown one) is what could happen if you over work the ball and the colors blend together. {smile} Still taste good though! So try it out and let us know how it goes! Enjoy.
